It is said that the bird that hops is virtually untrainable. It is a wild thing that cannot be reigned in nor taught. It learns and evolves creating it's own way of doing things. 

 

This is at the essence of what happens at Hoppingbird Pepper Company. Simply put we grow our own peppers and make stuff - hot sauce and jelly being the main things but we could make anything from sauerkraut to chutneys, there is just no telling because we grow different things each season. We make small batches of hot sauce, some will be similar but most will never be reproduced which we have been told is part of the charm.
